St. Paddy’s Day Matcha Energy Balls

I’ve recently fallen in love with matcha as a tea and addition to all kinds of food.

It’s super high in antioxidants, gives you sustained, non-jittery energy, and has a nice, earthy flavor that takes some getting used to, but once you learn to like it, you really love it.

These matcha energy balls are a perfect green-inspired recipe for St. Patrick’s Day, but of course are also great the rest of the year as well. They’re high in protein, healthy fats, and taste!

Here’s your St. Paddy’s Day matcha energy ball recipe:

Ingredients

2/3 cup vanilla whey protein powder
1/2 cup natural almond or other nut butter
2-3 Tbsp honey or maple syrup
3-4 Tbsp unsweetened almond or coconut milk
2 tsp matcha powder
1 tsp coconut sugar
Pinch of fine sea salt

Directions

In a medium sized bowl, mix together the protein powder, almond butter, honey or maple syrup, sea salt, and milk together. Since different protein powders vary in terms of dryness, you may need to add a little more milk, but don’t overdo it! The end result should be a sticky, workable dough. Use your hands to roll the dough into 10 evenly sized balls.

Next, mix together the matcha powder and coconut sugar and put the matcha mixture on wax paper. Evenly roll the balls in the matcha mixture, then place in the fridge. Eat chilled.
