Thai Spiced Almonds | Recipe

Almonds are a super convenient, portable snack, and by adding your own seasonings, you can take them to an entirely new level. Spiced up with a homemade Thai seasoning and coated with egg whites to make them extra crispy, these Thai Spiced Almonds are perfect for stashing in your desk or bag for when hunger hits.

Thai Spiced Almonds

Ingredients

For the spice mix

  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper

Remaining ingredients

  • 1 tablespoon egg whites
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce
  • 2 teaspoons coconut, crumbled, dried and shredded
  • 2 cups raw almonds

Directions

Preheat the oven to 300°F and line a baking sheet with parchment paper.

Combine spice mix ingredients. You’ll have some leftovers, so store it in a spice jar or sealed container for later use.

In a mixing bowl, stir together the egg whites, lime juice, hot sauce, shredded coconut and 1 tablespoon of the spice mixture until it resembles a thin paste.

Stir in the almonds, coating them as evenly as possible. Pour the coated almonds onto the parchment-lined baking sheet. Roast for 3035 minutes , pausing every 1015 minutes to break up the nuts and give them a shake for even cooking.

Remove the pan from the oven and allow the nuts to cool completely. During this time, they should become crispy. Store in an airtight jar.
