Peppermint chocolate amazeballs

This protein-packed and portable snack are just like our favorite Christmas treats. It reminds me so much of peppermint bark minus the sugar crash. They’re a delicious and healthy little snack!

You guys. The most bananas thing ever happened: the Pilot, aka THE SCROOGE, said to me:

“Hey, do you want me to take the Christmas decorations out for you?”

Like he was encouraging me to decorate early! The guy who adamantly preaches, “Honor the bird” from October through the day after Thanksgiving was actually cool with me jumping the gun and decking our halls as much as possible before Thanksgiving. People change. 

I think he knows that holiday decor genuinely makes me happy and since we’ve all been in need of some extra cheer, he told me to go for it. (<— not like I was going to ask him lol but when he removed the giant bins from garage for me it’s made the process so much more convenient.)

Our house will be decorated insanely early and I’ve been blasting Michael Buble Christmas music and Pentatonix since Halloween, but I’m still waiting for some special treats. I’m not doing any mulled wine or egg nog until December (it just feels right) and going to wait to start holiday baking.

It doesn’t mean I can’t infuse a little holiday cheer into my usual snacks, like these peppermint chocolate amazeballs.

This recipe is so easy to put together. It’s a twist on my classic chocolate amazeballs with a little candy cane action.

Peppermint chocolate protein bites! This protein-packed and portable snack are just like our favorite Christmas treats. It reminds me so much of peppermint bark minus the sugar crash. They’re a delicious and healthy little snack!

Serves 6
This protein-packed and portable snack are just like our favorite Christmas treats. It reminds me so much of peppermint bark minus the sugar crash. These protein bites a delicious and healthy little snack.

Ingredients
  1. 1/4 cup chocolate protein powder (I used Truvani)
  2. 1 tablespoon cacao powder
  3. 1/4 cup almond meal (or oat flour)
  4. 1/4 cup almond butter (or any nut butter you have on hand)
  5. 2-3 tablespoons maple syrup to thin it out
  6. Pinch of sea salt
  7. 1/4 cup crushed candy canes + more for rolling
Instructions
  1. In a food processor, crush the candy canes and set aside. I leave a little bit in the processor to mix in with the dough, too!
  2. Add the remaining ingredients to the food processor and pulse until a dough forms. Add more maple syrup if needed.
  3. Roll into 6-8 balls, using a melon ball scooper and your hands.
  4. Roll each ball into crushed candy cane.
  5. Store covered in the fridge.
Notes
  1. This recipe is so easy to customize! Feel free to use dried fruit, chocolate chips, nuts, or anything you have on hand instead of candy canes.
